避风塘虾 粤菜
1. 冻虾化冻,剪开背部去掉泥肠。洗干净之后沥干水分,裹炸鸡粉后放入油锅中用少许油两面煎一煎。
2. 煎好的虾放在盘中备用。锅中余油炒香肉末和姜末,稍微炒干一些,捞入虾盘中备用。
3.大量蒜泥(至少一整头蒜)放入少许热油中煎至金黄,放入切好的洋葱、尖椒和香茅(可省略)。
4. 炒出香味后将虾和肉末一起倒入,加少许料酒翻炒,最后用白胡椒粉和味精调味,即成。
注:肉末中拌入少许白醋(果醋)后再炒就能避免肉末结团现象,炒出的肉末松散可口。
