叫化鸡 江浙
1.肉鸡洗净,用精盐里外擦抹后腌制一两小时。
2.肉馅打水,加入葱姜末,再加入切成粒的冬菇和笋(可以用马铃薯替代)。加盐胡椒粉等调料调味,搅拌均匀后填入鸡腹中。
3.用温水泡软的干荷叶将鸡紧密包裹起来,用细麻绳捆扎紧。
4.用软面或黄泥涂抹在荷叶外,放入预热到200度的烤箱中烤90分钟。
5.剥开烤硬的面/泥壳和荷叶,将鸡剖开,即可食用。
