蒜泥捆蹄 家常
1.带皮蹄膀洗干净之后切开,剔去骨头,加盐、糖、料酒、姜片腌过夜(冰箱)。
2.将蹄膀卷起来,尽量用肉皮将瘦肉包裹在内。然后用纱布缠好,再用绳子扎紧。
3.放入冷水锅中加热,待水开后撇去浮沫,加料酒、盐、姜片,转小火焖煮一小时。
4.捞出晾凉,可放入冰箱储存两三天。
5.吃时解开纱布和线绳,切片摆盘,将调好的蒜泥调味汁浇上即可。
