全麦荷叶饼夹粉蒸肉
荷叶饼:
1. 全麦面粉加入酵母和水,揉成团,保温发酵至面团膨胀两倍。
2. 面团分剂,擀成椭圆形饼坯,对折成荷叶饼。
3. 放入蒸笼,蒸制15分钟。
粉蒸肉制作方法:
1. 大米文火干炒,砸碎,拌入五香粉和盐等调料。
2. 五花肉去皮,切成适当大小的块状或片状。拌入炒好的米粉料、料酒和剁碎的郫县豆瓣(鹃城牌)。
3. 碗底垫切成滚刀块儿的红薯,装入拌好的肉,加葱姜,于高压锅中蒸制半小时。
4. 食用时加热,翻扣入盘中。最好的食用方法是加入刚出笼的荷叶饼中。
