炸酱面 北京
1. 肉末加少量白醋拌匀,以免炒的过程中结团。
2. 肉末中加姜末料酒和白胡椒粉,下锅中用油炒至肉末颜色金黄。
3. 放入切成丁的豆腐干翻炒至水分蒸发、豆腐干表面金黄。
4. 加甜面酱、干黄酱和日本大豆酱,炒香出锅。
5. 煮好的面条拌入炒好的炸酱,配黄瓜条等小菜即可食用。
