紫薯馒头、花卷 北方面食
1. 冰冻紫薯泥化冻,加面粉和酵母之后和成面团。保温发面直到面团体积膨胀两倍。
2. 面团切剂,整形,揉成馒头。
3. 大面团擀开,抹油、撒椒盐、芝麻和葱花,卷起,沿着面卷的纵轴横切成等分的面剂。
4. 两个面剂一组,叠加,用筷子在上方沿横向压一道,揪住压痕的两头拉伸、翻转、捏合,即成花卷。
5. 二次发酵十分钟,上笼蒸十五分钟,出锅。
