豆角焖面 山西
1. 四季豆摘好,掰成寸段儿,干煸至表面有些缩皱。加入炒好的肉丝翻炒。加盐、味精和白胡椒粉调味,加水熬炖。
2. 普通面粉加水和出软硬适度的面团,切成适当大小的剂子,醒好后擀平,用压面机压出薄厚适中的面片,再压出韭叶宽的面条。放入蒸笼蒸十分钟,倒入熬好的菜码中拌匀,炒香。
