中式罐焖牛肉 谭家菜
1. 纯瘦肉的牛通脊切条之后切滚刀块,飞水。
2. 胡萝卜切滚刀块,飞水。
3. 锅里放少许植物油,放入姜片和葱段再加入番茄酱,中火炒香。
4. 倒入牛肉,加料酒翻炒均匀。
5. 加开水,没过牛肉为佳。用盐、白胡椒粉调味,加少许白糖中和番茄酱酸味。
6. 加锅盖小火焖20分钟,加入切块的鲜口蘑,勾薄芡(最关键环节)。
7. 倒入焖罐中,点几滴料酒,盖严罐盖,上锅蒸四十分钟,即成。
