清蒸虹鳟
新鲜虹鳟放入加了一勺白醋的清水里泡十分钟,将软化的细鳞刮掉。
从鱼肚内侧切开鱼脊两侧,使得鱼身可以摊开在一个平面上。
用剪刀把鱼肚剪开成适当大小的条状。
抹料酒,加姜丝,放在盘子里摆好,上笼屉小火虚蒸十分钟,关火之后捂五分钟。
取出鱼盘,撒葱丝,浇蒸鱼豉油,烧热油浇在葱丝上,即成。
